Pesto Chicken

Serves 2 adults and 2 children (with possible leftovers for another 2 children)

What you need:

500g chicken mini fillets

1 medium courgette

10 green beans (topped and tailed and halved)

150 mushrooms (sliced)


2 tbsp creme fraiche

2 tbsp pesto (jars can be high in salt so it’s great if you can make your own)


What to do:

Fry the chicken in a little refined olive or rapeseed oil until brown.

Add all the vegetables and fry until softened.

Add the creme fraiche and pesto and fry until the chicken is cooked through and the vegetables are tender.

Serve with wholegrain pasta or mashed potato and some further veg of your choice.

This recipe is suitable for a child you can already self feed. It can be used as finger food for a baby who is ready, but take care with stringy beans.
